Apple Pancakes for the WIN

I’m going to be completely honest with you…..Tik Tok made me do it. It’s the late night scrolling that has me believing I can travel the world, be a chef, dancer, model, and make people laugh all at the same time! I may sound crazy to some, but if you’ve fallen into the Tik Tok trap..then you understand.


About a week ago I came across this video of a woman making pancakes from apples, yes apples! Mind you, I have a huge love for sweets! So this video instantly had me hooked and headed to the grocery store the next day to buy the supplies needed. Thank you Justine E., or @justine_snacks, for this incredible and super easy recipe!


Like I said, I have a huge love for sweets, but certain foods tend to make me feel sluggish and give me headaches because of all the processed sugar and added preservatives. So I have been searching for healthier alternatives to satisfy my sweet tooth. Mind you, I don’t completely rule out the unhealthy sweets! Your girl will indulge every once in a while!


Now let’s get to what you really came here for….THE PANCAKES! All you need are these simple ingredients:

  • 1 apple

  • 1/3 cup of plain oats (Quaker Old fashioned is great!)

  • 1 egg white

  • 1/4 tsp of baking powder

  • Cinnamon ( I honestly didn’t measure how much cinnamon I used..have fun with it!)


These apple pancakes make for a great breakfast treat, yet don’t make you feel guilty for giving in to a sweet start to your morning! This recipe is gluten free, sugar refined free, and also includes oats! Oats gives you that extra fiber and helps you to feel more full rather than bloated.


Let’s get right down to the directions!

  1. Take your apple and chop it up into tiny pieces….let me know when you’re done…ok awesome!

  2. You’re going to put those apple chunks into a bowl, sprinkle some cinnamon on there…mhmm, and then pop that into the microwave for 3 minutes!

  3. Add 1/3 cup of oats, 1/4 tsp baking powder, and egg whites into your nutribullet or blender (either one works great).

  4. Add a medium sized cooking pan to your stove and set it on low heat. Don’t forget to spray the pan with either coconut oil, avocado oil, or whatever oil you may prefer!

  5. Are your apples nice and warm? Take them out of the microwave and add them to the blender!

  6. Blend that mix all together and you have made your pancake batter!

  7. Head over to your pan and pour out your batter to let your pancakes cook! Let each side cook for about 5 minutes!

  8. Don’t leave the stove though! Keep your eye on them because we’re not trying to over cook them!

SIDE NOTE: If you want to sprinkle a little more cinnamon on your pancakes while they cook, I fully support you.

9. Once they are nice and golden brown, serve them on a plate and add whatever fruits or toppings that make you happy! ENJOY!


There you have it! Not only are these pancakes so delicious, fluffy, and easy, they only take about 10 minutes in total to prep and cook! So the next time you’re in the kitchen debating on what cereal to eat, stop…put the bowl down…and go try something new! Feel free to play around with the ingredients as well!
